Thai coconut curry, or Khao Soi, is a favorite in northern Thailand with its rustic culinary traditions. Heat sauce in a saucepan, add favorite protein and vegetables, and cook through. Serve over egg noodles with traditional garnishes like shallots, chili oil and lime. Also use as a stir-fry, marinade or finishing sauce in fusion creations of your own.
Ingredients: Coconut milk, water, coconut sugar, red curry paste (garlic, water, shallot, dried chili, salt, lemongrass, sugar, kaffir lime peel, galangal, coriander seeds, cumin, cardamom), lime juice, sunflower oil, ginger, sugar, curry powder (coriander seed, tumeric, cumin, star anise, cinnamon, clove cardamom, nutmeg, mace, sand ginger), salt
